I'm assuming this is fine and no CM would give you a hard time. But has anyone just walked up and scanned their LL for an early throway ride with out actually getting in line, just to open up their bookings for all parks for the day? Want to do this and hoping it wouldn't cause any issues.

I did this with Pixar at Epcot, which is a perfect way to book Frozen and Soarin' after doing Remy in early entry, and had no issues. My only worry was that it might be a bit demoralizing for the cast member who was stationed at the lightning lane entrance because I get the impression that Pixar is used a lot for this purpose. He didn't seem to mind though.
There's nothing stopping you from doing that, if you're worried you could just enter the line and then turn around and come back out, there could be a ton of reasons why you would need to do that.
Generally cast members always try to be helpful and friendly so I can't see them giving you a hard time about it, they'll know that's just how the system works and I bet you won't be the first or last people to do it either.
Can you do it - yes in theory
I have done it only for my son after he decided last minute to not ride something. But he still walked the queue and then used the “chicken exit”
I would just tell the cast member when you get there. However in general this seems like a waste - there are so many good options hopefully you can find one you want to ride.
